Boneyard Breadsticks (Or Bloody Bones)

Ingredients:
Pillsbury pre-made breadsticks
Olive Oil
Parmesan Cheese
Italian Seasoning
Marinara Sauce

Directions:
*Separate each breadstick and cut about a 1-1 1/2 inch slit down the center of each end (each end should look forked).
*Roll each side of the slit and squish down so that it stays put during baking. It should look like two small balls (sts) on each end of the breadstick.
*Brush breadsticks with a little olive oil and sprinkle on parmesan cheese and seasoning.
*Bake as directed on package.
*Serve with Marinara Sauce.

These are really cute and super easy to make for any halloween bash. They look like real bones when finished!

Hoisin-Glazed Shrimp Skewers

Ingredients:
1 pound peeled and deveined medium shrimp
1/4 cup hoisin sauce
2 teaspoons toasted sesame seeds

Directions:
*Thread shrimp onto 6-inch skewers, wrap the skewer ends with foil, and place on a broiler-proof rimmed baking sheet.
*Basting shrimp with the hoisin sauce and broil until opaque throughout, 2 to 3 minutes per side
*Sprinkle with sesame seeds after removing from oven.
*Serve over white rice

Patrick's Saturday Night Nachos

Ingredients:
Tortilla chips
Shredded cheese (cheddar, 4-blend, Mexican-blend, Colby-Jack, or your favorite cheese!)
Sliced jalapenos

Directions:
*Heat oven to broil
*Line cookie sheet with aluminum foil and layer with tortilla chips
*Sprinkle cheese (as much as desired....Patrick likes ALOT!) on top of chips
*Scatter jalapeno slices over top
*Broil a couple of minutes until cheese is melted and bubbly

Pizza Snacks

Ingredients:
2 whole wheat English muffins, sliced
1/4 cup marinara sauce
1/4 cup diced bell pepper
1/4 cup sliced black olives
4-5 fresh basil leaves, roughly chopped
1/2 cup shredded part skim mozzarella cheese

Directions:
Preheat oven to 375F.
*Place English muffins on a baking sheet lines with aluminum foil.
*Top with marinara sauce, bell pepper, olives and basil.
*Sprinkle with cheese and bake for 12-15 minutes until cheese is melted.

Serves: 8

Whole-Wheat Pita Chips with Mascarpone-Chive Dipping Sauce

Ingredients:
4 whole-wheat pita breads, halved
2 tablespoons olive oil
1 teaspoon dried oregano
1/2 teaspoon kosher salt plus extra for seasoning
1/2 teaspoon freshly ground black pepper, plus extra for seasoning
4 strips bacon, cooked until crisp, finely chopped
1 cup (8 ounces) mascarpone cheese, at room temperature (you could use cream cheese if you cant find mascarpone)
3/4 cup sour cream
1/4 cup chopped fresh chives

Directions:
*Place an oven rack in the center of the oven and preheat to 450 degrees F.
*Cut each pita half into 4 wedges.
*Arrange the pita wedges in a single layer on a baking sheet.
*Brush with the oil, then sprinkle with the oregano, salt and pepper.
*Bake for 5 to 8 minutes until crisp and golden.
*In a medium bowl, combine the bacon, mascarpone cheese, sour cream, and chives.
*Season with salt and pepper, to taste.
*Transfer the dip to a serving bowl.
*Arrange the pita chips and dip on a platter and serve.
