Ingredients:
*1 ready-to-use refrigerated pie crust
*1 tsp flour
*1 3/4 cups shredded cheddar cheese
*1/4 cup shredded swiss cheese
*1 package fresh spinach, sauteed
*1 cup milk or cream
*4 eggs, beaten
*1/2 tsp. salt
*1/4 tsp pepper
Variations: You can add other yummy veggies to compliment the spinach. Caramelized onions, leeks, and mushrooms would all work well.
Directions:
*Heat oven to 350°F.
*Line 9-inch pie plate with crust; flute edge.
*Toss cheese with flour in medium bowl. Add remaining ingredients. Mix. Pour into crust.
*Bake 1 hour or until knife inserted in center comes out clean.

Chocolate Chip Muffins
Ingredients:
2 cups flour
2 tsp baking powder
1/2 tsp baking soda
Pinch of salt
3/4 cup butter
3/4 cup sugar
2 eggs
2 tsp vanilla
1 cup sour cream
6 oz semi-sweet chocolate chips
Directions:
*Preheat oven 400*
*Cream butter and sugar until fluffy
*Beat in eggs
*Beat in vanilla
*Mix dry ingredients and add to butter mixture (ALTERNATE with sour cream - begin and end with flour)
*Stir in chocolate chips
*Bake 20 minutes
Makes: 1 dozen.

Cinnamon Walnut Coffee Cake
*Note: double the recipe if you want to use a Bundt cake/ring mold - you won't end up using all the batter, but if you don't double it, it won't fill up the mold enough.
Ingredients for topping:
2/3 cup flour
1/3 cup packed brown sugar
1/3 cup sugar
2 tsp pumpkin pie spice
1/8 tsp salt
6 Tbsp cold butter in pieces
1 and 2/3 cups chopped walnuts
Ingredients for cake filling:
2 1/4 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp pumpkin pie spice
1/4 tsp salt
6 Tbsp butter room temp
1/2 cup brown sugar
1/2 cup sugar
2 eggs
1 tsp vanilla
1 cup buttermilk
Ingredients for icing:
1 cup confectioners sugar
1-2 Tbsp milk
Directions:
*Heat the oven to 350 F
**For the topping:
*Mix the first five dry ingredients together, then cut butter into the dry mixture, and stir in walnuts
**For the cake:
*Mix together the first five dry ingredients, set aside.
*Beat butter and both sugars until creamy and blended.
*Beat in eggs
*Add vanilla
*Beat until smooth.
*On low speed, beat in flour mixture, alternating with buttermilk.
*Spoon half of batter into prepared pan
*Sprinkle half of topping over batter
*Put rest of batter in, then the rest of topping on last.
**Note: If using a Bundt cake/ring mold, only fill the mold 2/3 full to let it rise. Can also make in any cake pan or casserole dish)
*Bake for 50-60 min until cake tester inserted is clean
*Cool on wire rack
**For the Icing:

*Pour in a light drizzle over the finished cake while barely warm

Pumpkin Roll
Ingredients:
3/4 cup all-purpose flour
1 cup white sugar
1 tsp baking soda
2 tsp pumpkin pie spice
1 cup pumpkin puree
3 eggs
1 tsp lemon juice
2 TBSP confectioners' sugar
Filling Ingredients: (Or just use pre-made cream cheese frosting)
1 (8 oz) package cream cheese, softened
1/4 cup butter, softened
1 tsp vanilla extract
1 cup confectioners' sugar
Directions:
*Preheat oven to 375.
*Grease and flour a 9-13 inch jelly roll pan or cookie sheet.
*In a large bowl combine flour, sugar, baking soda and pumpkin pie spice.
*Stir in pumpkin puree, eggs, and lemon juice.
*Pour mixture into prepared pan.
*Spread the mixture evenly and bake at 375 for 15 minutes.
*Lay a damp kitchen towel on the counter, sprinkle it with confectioners' sugar and turn the cake onto the towel.
*Carefully roll the towel up with the cake in it.
*Place the towel on a wire rack to cool for 20 minutes.
*Mix the cream cheese, butter, vanilla and confectioners' sugar in a medium sized bowl with an electric mixer.
*Unroll the cake and spread the filling evenly on the cake.
*Immediately re-roll the cake (without the towel) and wrap it in plastic wrap.
*Keep the cake refrigerated.
*Before serving, cut the cake into slices

1 lb hot bulk sausage
3 1/2 cups bisquick
10 oz package grated sharp cheese
Directions:
*Combine all ingredients and shape into bite size balls.
*Bake at 350 F for 15-20 minutes.
Makes ~100 balls

Frank's Favorite Banana Bread
Ingredients:
1/2 stick of butter
1/2 cup brown sugar
1/2 cup honey
2 eggs
3 ripe bananas, mashed
1 and 1/2 cup flour
1/2 teaspoon baking soda
1/2 teaspoon salt
Directions:
*Soften butter until spreads easily.
*Beat butter, sugar and honey for a couple minutes
*Add eggs and thoroughly mix in bananas
*Sift together flour, soda, salt and then blend into the mixture
*Butter a 12x4.5x2.5 pan and pour in batter
*Bake at 350 degrees for about an hour.
Makes one loaf of banana bread

Lemon Ginger Scones

1/4 tsp baking soda
1/4 tsp salt

1/2 cup crystallized ginger cut into small pieces
Zest of 1 lemon
2/3 cup of buttermilk
1 egg white
1 Tbsp milk
1/4 cup powdered sugar
Directions:
*Preheat oven to 400 degrees F (200 degrees C)
*In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt.
*Cut the butter into small pieces and blend into the flour mixture with two knives. (The mixture should look like coarse crumbs)
*Stir in the chopped crystallized ginger and lemon zest.
*Add the buttermilk to the flour mixture and stir just until the dough comes together (Do not over mix the dough)
*Transfer to a lightly floured surface and knead dough gently four or five times and then pat the dough into a circle around an inch and a half thick.
*Cut this circle in half, then cut each half into 3 or 4 triangles.
*Place the scones on a greased baking sheet.
*In a small bowl, mix the egg white with the milk and glaze the tops of the scones with this mixture.
*Bake for about 20 minutes or until golden brown and a toothpick comes out clean.
*Remove from oven and then turn your broiler on high.
*Sift powdered sugar heavily over the tops of the scones and place them under the broiler.
*Broil for just a couple of seconds, until the sugar has melted and turns golden brown.
(Make sure to watch the scones carefully as the sugar will burn very quickly!)
*Transfer to a wire rack to cool.
Makes 6 - 8 scones.

I sometimes add a tablespoon or so of poppy seeds to the mix and you can swap out the ginger and/or lemon zest for other yummy things like dried apricots, raisins, apples etc.

Good Morning Muffins
Ingredients:
1/2 cup wheat germ plus a little for dusting the muffin cups
1 cup unbleached flour
1 cup whole wheat flour
1 tablespoon baking powder
2 teaspoons ground cinnamon
1/2 teaspoon salt
1 large egg
1/2 cup lightly packed dark brown sugar
1 1/2 cups milk
1/4 vegetable oil
1 large apple peeled, cored and grated
2 carrots grated (1 if adding the zucchini)
1 zucchini grated
1/2 cup walnuts chopped (optional, I didn't add this)
1 1/2 cups oat and Brown sugar crumb topping
Directions:
*Butter 12 muffin cups and sprinkle a little wheat germ into each one or use paper muffin cups and put a little wheat germ in the bottom.
*Preheat the oven to 400*F
*In a large bowl, combine the flour, wheat germ, baking powder, cinnamon, and salt.
*Whisk the egg and brown sugar in a separate bowl.
*Whisk in the milk.
*Make a well in the dry ingredients, add the liquid---including the melted butter(oil)---and stir to blend. *When a few streaks of dry are still visible, fold in the grated apple, zucchini, carrots and walnuts.
*Divide the batter evenly among the muffin cups.
*Scatter a good amount of the crumb topping over each muffin and bake for 22 minutes.
*Cool the muffins in the pan on a rack for 3 minutes, then pop them out and serve hot.
Makes 12 muffins

*Spread bread (as many slices as you want) with butter (as much or as little as you want)
*Broil in toaster oven until butter is melted
*Immediately spread nutella on top while bread is still warm so that the nutella melts......

5 eggs
1 tsp vanilla
1 stick margarine
1 pkg French bread, Texas Toast, or cinnamon bread
1 1/2 cup milk
Syrup
Powdered sugar
Directions:
*Melt margarine
*Add brown sugar and corn syrup, mixing well
*Spray a 9 x 13 pan with non-stick spray.
*Slice brerad into 3/4"-1" thick slices.
*Pour butter mixture into baking dish, arranging bread slices flat in butter mixture, squeezing to fit in.
*Mix eggs, milk, and vanilla with a mixer and pour over bread.
*Cover and refrigerate overnight.
*Uncover and bake in 350* oven for 30 minutes.
*Dust with powdered sugar.
*Serve right from the baking dish.
*Serve with your favorite syrup, if desired.

*Cut six 1 inch thick slices from the center of the bread loaf.
*Arrange tightly on top of mixture.
*In sep bowl whisk eggs, half and half, vanilla, Grand Marnier (OJ) and salt.
*Pour over bread.
*Chill 8 hours
*Preheat oven 350 degrees
*Bake bread mixture uncovered until bread starts to puff and edges are golden brown.
*Cook for 35-40 minutes.
*Serve with warm delicious maple syrup if desired.

Ham & Broccoli Strata
Ingredients:
6 cups frozen chopped broccoli, thawed and drained
3/4 pound thinly sliced deli ham, cut into 1/2 inch strips

Directions:
*In a large bowl, combine broccoli, ham, and cheese; spread half into a greased 9x13 inch baking dish. *Arrange bread slices on top.
*Cover with remaining broccoli mixture.
*In a large bowl, combine the eggs, milk, onion, mustard and hot pepper sauce.
*Pour over broccoli mixture.
*Sprinkle with paprika.
*Cover and refrigerate overnight.
*Remove from refrigerator 30 minutes before baking.
*Bake, uncovered at 350F for 35-40 minutes or until knife inserted near center comes out clean.
*Let stand for 5 minutes before serving.

2 cups shredded cheddar or Colby cheese

1 tsp Worcestershire sauce

*Top with 1 1/2 cups shredded cheese.

*In a large bowl, beat eggs until light and fluffy.
*Stir in remaining ingredients. Pour over muffins.
*Let stand for 15 minutes (or overnight).
*Preheat oven to 300F and bake for 45 minutes or until puffed and browned.
*Let stand for 10 minutes before serving.

*Heat oven to 425 F
*Mix brown sugar and cinnamon in a bowl.
*Melt butter in a bowl.
*Cut cherries in half and spread them and coconuts on a pie sheet where the biscuits will be.
*Separate the biscuits.
*Use a fork to dip each biscuit in butter and put some brown sugar and cinnamon on them.
*Put the sugar and cinnamon covered biscuits in a circle on the pie sheet.
*Bake for 11 minutes.
*Take it out from oven and flip it upside down on a plate. Cut it and ready to serve!
(Note: You can use pineapples or bananas instead of cherries or shredded coconuts.)

Eggs
Butter
Directions:
*Heat a skillet on medium heat.
*Slice the bread into thick slices — butter both sides.
*Cut a hole in the center of the bread (about the size of sand dollar) -- save the center, that’s the best part!
*Place the bread (and the cut out part) on the skillet
*Break an egg and cook to your desired consistency — flipping every 1-2 minutes

*Roll biscuit pieces in cinnamon/sugar mixture
*Arrange in Bundt pan
*Melt butter and stir in brown sugar
*Pour over biscuits
*Bake at 350* F for 30 minutes

Lots of powdered sugar
Little bit of milk
Dribble of vanilla
Stir

*Unroll and pinch together the seams between the triangles {you’ll be left with 2 rectangles}
*Spread butter over your two rectangles.
*Sprinkle with cinnamon sugar.
*Roll up
*Cut into ciniminis. (I cut them about every inch)
*Bake on parchment paper according to directions on package… (I think it’s 375 for 8-10 mins)
*Drizzle with icing.

*In a medium sized bowl, beat together eggs, milk, sugar, vanilla and nutmeg.
*Place bread slices on a rimmed baking sheet.
*Pour egg mixture over bread and let stand a few minutes.
*Turn slices over and let stand until all egg mixture is absorbed.
*Freeze, uncovered, until firm, and then package airtight and return to freezer.
*When you are ready to serve, place the desired number of frozen slices on a lightly greased baking sheet. *Brush each slice with melted better.
*Bake in a 500 degree (F) oven for 8 minutes.
*Turn slices over, brush with melted butter, and bake an additional 10 minutes or until nicely browned.
Serves: 8 French Toast slices
