Ingredients:
1 can (21 oz) apple pie filling
8 medium size flour tortillas
2-3 tsp ground cinnamon
¾ cup butter
¼ cup powdered sugar
Optional: Vanilla ice cream or whipped cream
Directions:
*Empty pie filling into bowl.
*Add cinnamon and mix.
*Spoon small amount of mixture into center of tortilla.
*Roll up and place seam side down in greased 9x13 dish.
*Melt butter and brush over top of enchiladas.
*Bake at 300 degrees for 25 minutes.
*Sprinkle with powdered sugar.
*Serve warm.
*Optional: Serve with vanilla ice cream or whipped cream.
Note: You can make the enchiladas one or two days in advance, cover with foil and put in refrigerator. It is best to bring enchiladas to room temperature before cooking.

Yummy Grape Salad
Ingredients:
1 pkg sour cream
1 pkg cream cheese
1 cup sugar
2-3 cups green grapes(in halves)
1/2 cup pecans
Directions:
*Mix all ingredients togther.
*Serve Chilled

Apple Salad
Ingredients:
1 cup sugar
1/4 cup flour
1 large can crushed pineapples
4-5 granny smith apples, diced
1 8 ounce pkg cream cheese
Directions:
*Cook sugar, flour, and pineapples until thickned.
*Stir constantly to keep from scorching.
*Add cream cheese until melted. Let Cool
*Pour over diced apples and blend togther.
*Top with Cool Whip.
*Garnish with nuts and cherries.

Macadamia Cod with Nectarine Salsa
Ingredients:
(Salsa):
2 small firm nectarines (pitted and diced) or peaches...canned fruit works well out of season
1/4 cup finely diced red bell pepper
2tbls thinly sliced green onion tops
2tbls lime juice
1 jalepeno pepper seeded and finely chopped (dont skip this...even if you dont like spicy food...just avoid any of the seeds)
1/4 tsp salt
Combine the above ingredients and mix well. Set aside.
(Cod Fillets):
2 cod fillets (subsititute different firm, white fish if needed)
1/4 cup chopped macadamia nuts
1/4 tsp paprika
Directions:
*Combine nuts and paprika, mix well.
*Arrange fillets on small bar pan.
*Carefully sprinkle mixture over tops of fillets, forming an even layer.
*Bake 12-15 minutes or until cod flakes easily with fork.
*Remove fish from oven and serve over top of salsa.
*I serve with rice..you know, something facny like Rice a Roni rice pilaf)! YUMM-O!!!!

3 TBSP flour
3 TBSP pineapple juice
1 cup grated Cheddar cheese

Marshmallow Creme
Whipped cream cheese spread
Confectioners sugar
Directions:
*Use equal amounts of marshmallow creme and whipped cream cheese spread.
*Add confectioners sugar to desired sweetness.
*Serve with a variety of fresh fruit.
*May be tinted with food coloring.

Fruit Kabobs with Mint Marinade
Ingredients:
1 1/2 cups water
1 cup sugar
1 cup fresh mint leaves
Juice of 1 orange
Juice of 1 lemon or lime
5 cups watermelon balls
1 cantaloupe, scooped into balls
3 cups (about 1 pound) green grapes
2 cups fresh stawberries, capped
Whole pears (optional)
Directions:
*Combine water and sugar in a heavy saucepan; bring to a boil, stirring frequently.
*Stir in mint and fruit juice; set aside to cool.
*Combine melon, grapes, and strawberries in a large, shallow container; add mint mixture.
*Cover and marinate in refrigerator 1 to 2 hours.
*Drain well.
*Alternate fruit on 6 inch skewers; insert skewers into whole pears, if desired.
Yields: About 3 dozen kabobs.

Best (and Easiest) Banana Pudding
Ingredients:
Nilla Wafers
4-5 large ripe bananas (slice)
1 large Cool Whip
1/2 Small jar Coffee Mate (~1 1/2 oz.) (I use French Vanilla flavor)
1 large box instant vanilla (or french vanilla) pudding mix
1 can sweetened condensed milk
2 1/2 cups milk
1/4 cup sugar (optional)
Directions:
*Filling: Mix pudding, milk, condensed milk, and sugar
*Topping: Mix Cool Whip and Coffee Mate
*Use a large bowl and place one layer of wafers, followed by layer of sliced bananas
*Pour layer of pudding mixture
*Top with layer of Cool Whip Mixture
*Repeat layers of wafers, bananas, pudding, and Cool Whip mixtures until bowl is full.
*Put extra Cool Whip mixture on top and sprinkle with crushed Nilla Wafer crumbs.
*Refrigerate. (Will keep several days)
