Ingredients:
1 package chocolate pudding
12-15 graham crackers
Cool whip
Directions:
*Prepare the chocolate pudding according to directions on the box.
*Beginning with pudding, layer the pudding and graham crackers in a baking dish.
*Top with cool whip.
*Refrigerate covered with foil until ready to serve.
*Let sit for 5 minutes, cut and enjoy!

Honey Bun Cake
Ingredients:
1 package yellow cake mix
3/4 c. vegetable oil
4 eggs
1 (8 oz.) package sour cream
1 c. brown sugar
1 T. cinnamon
Frosting Ingredients:
2 c. powdered sugar
4 T. milk
1 t. vanilla
*whisk together
Directions:
*Preheat oven to 325F
*Mix cake, oil, eggs and sour cream.
*Pour 1/2 of the batter into a 9 x 13 ungreased baking dish.
*Combine brown sugar and cinnamon — sprinkle over batter.
*Spoon other 1/2 on top of pan – twirl with butter knife.
*Bake for 40 min.
*Frost cake when hot.

Chicken Enchilada Casserole
Ingredients:
5 chicken breasts, boiled and shredded
1/2 white onion, finely diced
1 can chopped olives (small)
1 can green chiles (small)
14 oz. green chile enchilada sauce
1 1/2 c. shredded colby jack cheese, divided
Tortillas
Green enchilada sauce (1-2 more cans)
Directions:
*Preheat oven to 350F
*Mix chicken, onion, olives, chiles, enchilada sauce and 1 c. cheese in a bowl.
*Pour a little enchilada sauce to cover the bottom of the casserole dish.
*Place tortillas along the bottom to completely cover the dish, cover with enchilada mix -- alternate until all the mix is gone.
*Cover the top layer with additional enchilada sauce, cover with foil and bake in the oven for 30 min.
*Remove the foil, cover with the last 1/2 c. shredded cheese and bake for 5 minutes.

Personal Notes: This is an easy alternative to enchiladas if you are running short on time (who isn't?) They are also very healthy -- adjust the amounts of cheese accordingly and this is a nearly guilt-free meal!

Matt’s Hole in Ones
Ingredients:
Loaf of white bread, unsliced (bread machine bread works the best)
Eggs
Butter
Directions:
*Heat a skillet on medium heat.
*Slice the bread into thick slices — butter both sides.
*Cut a hole in the center of the bread (about the size of sand dollar) -- save the center, that’s the best part!
*Place the bread (and the cut out part) on the skillet
*Break an egg and cook to your desired consistency — flipping every 1-2 minutes
A fun twist...
Matt’s Hole in “Juans” (Mexican-style)
Same recipe as above...served with homemade salsa (or any salsa will do) and shredded cheddar cheese
Homemade Salsa Ingredients:
Diced tomatoes – 1 can

Thai Peanut Dressing
Ingredients:
1/3 c. peanut butter
3 Tbsp. olive oil
3 Tbsp. lemon juice
2 Tbsp. soy sauce
2 tsp. sugar
1/2 Tbsp. red pepper flakes
1/4 tsp. garlic powder
1/4 tsp. ground ginger
1/3 c. warm water
Directions:
*Whisk the first 8 ingredients and then whisk in the water.
*Mix with pulled pork, diced red peppers, diced cucumbers, shredded carrots served on lettuce for delicious lettuce wraps, or slow cook over chicken in the crock pot and serve with rice.
Be creative...you really can’t go wrong with this recipe!

Matt’s Boner Cookies
Ingredients:
1 c. butter
1 c. packed light brown sugar
1/2 c. white sugar
2 eggs
2 t. vanilla
1 1/4 c. flour
1/2 t. baking soda
1 t. salt
3 c. quick-cooking oats
1 c. chopped macadamia nuts
1 c. semisweet choc. Chips
Directions:
Preheat oven to 165 C (325 F)
Cream together butter, brown sugar and sugar. Beat in eggs one at a time, then stir in vanilla.
Combine flour, baking soda and salt — stir into creamed mixture.
Mix in the oats, nuts and chocolate chips.
Drop by spoonful onto ungreased baking sheets
Bake for 12-14 minutes. Allow cookies to cool for 5 min. - then transfer to a wire rack.

1 T. red chili paste (Sambal Oelek)*
1/2 c. mango chutney*
Slivered almonds
*Both the * ingredients can be found at REWE in Speicher...Asian food section in little red jars!
Directions:
1. Preheat the oven to 225 C
2. Cut chicken – season – fry in frying pan (or boil/bake if that is quicker/easier for you)
3. Dice pepper and mix with chicken in an oven-safe dish.
4. Whisk whipping cream – add all ingredients.
5. Pour over chicken and bake for 20 minutes.
Serve over rice and ENJOY!
Serves 4.
