Chicken Quesadillas

Ingredients:
2 cups cooked chicken
2 cups shredded cheddar cheese
1 cup chopped tomato
1/4 c chopped green onions
1/2 tsp each crushed red pepper, ground allspice, thyme leaves
8 (8 inch) flour tortillas
paprika
oil to brush on top

Directions:
*Preheat oven to 350 degrees
*Mix chicken and cheese, tomato, green onion, and spices
*Spread evenly on 4 (8 inch) tortillas
*Top each with another tortilla
*Lightly brush top with oil. Sprinkle with paprika
*Bake in oven for 10 minutes or until cheese melts

Spinach Cheese Manicotti

Ingredients:
1 (15 oz) container ricotta cheese
1 (10oz) package frozen spinach thawed and squeezed dry
1/2 cup minced onion
1 egg
2 tsp minced parsley
1/2 tsp pepper
1/4 tsp garlic powder
1 1/2 cups shredded mozzarella cheese
1/2 cup grated parmesan cheese
2-26 oz jars spaghetti sauce
1 1/2 cups water
1 (8 oz) package manicotti shells

Directions:
*Preheat oven to 350 degrees F
*In a large bowl, combine ricotta, spinach, onion, and egg.
*Season with parsley, pepper, and garlic powder.
*Mix in 1 cup mozzarella and 1/4 cup parmesan.
*In a separate bowl, stir together spaghetti sauce and water
*Spread 1 cup sauce in the bottom of a 9x13 inch baking pan.
*Stuff uncooked manicotti with ricotta cheese mixture and arrange in single layers.
*Cover with remaining sauce.
*Sprinkle with remaining mozzarella and parmesan cheese.
*Bake in oven for 45-55 minutes

Serves: 6

Parmesan Chicken

Ingredients:
1/2 clove garlic, minced
1/2 stick butter, melted
1/2 cup dried bread crumbs
1/6 Cup parmesan cheese
1 Tablespoon chopped parsley
1/8 tsp garlic salt
1/8 tsp salt
pinch of ground pepper, and Italian Seasoning
1 LB chicken meat, cut into pieces no larger than 2X2

Directions:
*Preheat oven to 450 degrees
*Combine minced garlic with melted butter
*In another bowl mix everything else
*Take piece of chicken, put in butter, then in bread crumb mix, place in baking bowl.
*Once all pieces of chicken are done, cook for about 15 minutes, or until chicken is cooked all the way through....

Serves: 4

Cheesy Potato Casserole

Ingredients:
1 ½ to 2 pounds frozen hash brown potatoes, thawed
¾ C chopped onion
1 can cream of chicken soup
1 stick butter, melted
16 oz. sour cream
2 c grated cheddar cheese, plus a little more for the top
1 t salt
1 t pepper

Directions:
*Mix all ingredients an put into 9 x 13 inch casserole.
*Top with a little bit of grated cheese.
*Bake at 350 degrees for 1 hour.

Carrot Cake with Cream Cheese Frosting

Carrot Cake Ingredients:
2 c. Flour
2 c. sugar
2 t. baking soda
2 t. cinnamon
1/2 t. all-spice
1 c. oil
1 t. vanilla
3 eggs, beaten with fork
1 c. drained, crushed pineapple
2 c. grated carrots
1 c. nuts

Directions:
*In large mixing bowl, mix dry ingredients. Make a well in the center. Add oil, eggs, and vanilla. Mix lightly, add pineapple, carrots, and nuts. Mix together well.
*Pour into greased and floured 9 x 13" pan. Bake at 350 degrees for 45 minutes to 1 hour

Frosting Ingredients:
1-8 oz package cream cheese
1 lb. powdered sugar
1 stick butter
1 tsp. vanilla

Directions:
*Soften cream cheese and butter and whip together with electric mixer. Add powdered sugar, vanilla, and continue beating until smooth consistency.
