Ingredients:
48 Hershey's Kisses
1/2 C shortening
3/4 C peanut butter
1/3 C granulated sugar
1/3 C packed light brown sugar
1 egg
2 Tbls milk
1 tsp vanilla extract
1 & 1/2 C flour
1 tsp baking soda
1/2 tsp salt
Granulated sugar
Directions:
*Heat oven to 375 F.
*Remove wrappers from chocolate.
*Beat shortening and peanut butter in large bowl until well blended.
*Add 1/3 C granulated sugar and brown sugar; beat until fluffy.
*Add egg, milk and vanilla; beat well.
*Stir together flour, baking soda and salt
*Gradually beat flour mixture into peanut butter mixture.
*Shape dough into 1-inch balls.
*Roll in granulated sugar
*Place on ungreased cookie sheet.
*Bake 8 to 10 minutes or until lightly browned.
*Immediately press a chocolate piece into center of each cookie
*Cookie will crack around the edges.
*Remove from cookie sheet to wire rack.
*Cool completely.
Makes 4 dozen.
Prep time: approx. 15 mins.
Bake time: approx 8 mins

Campbell's Green Bean Casserole
Ingredients:
1 can (10 & 3/4 oz.) Campbell's brand Cream of Mushroom Soup
1/2 C milk
1 tsp soy sauce
dash pepper
4 C cooked cut green beans
1 & 1/3 C French's brand French Fried Onions
Directions:
*Mix soup, milk, soy sauce, pepper and 2/3 C onions in 1 & 1/2 quart casserole.
*Bake at 350 for 25 mins or until hot. Stir.
*Sprinkle with remaining onions and bake for 5 more minutes.
Prep time 10 mins. Cook time 30 mins
Serves: 6

Roasted Vegetable Lasagna
Ingredients:
2-3 med zucchini
1 med peeled eggplant
1 red pepper
1 med sweet onion
olive oil
fresh ground pepper
1 jar of favorite spaghetti sauce
6 No-boil lasagna strips
1 container low fat cottage cheese
1 egg
1/3 C grated parmesan cheese
8 oz bag shredded mozzarella cheese
Directions:
*Line cookie sheet with aluminun foil, spray with Pam.
*Cut veggies in bite size pieces and spread on foil lined pan.
*Drizzle with olive oil and as much fresh ground pepper as you like.
*Bake in 400 degree oven 15 min
*Mix veggies and cook another 15 min.
*Using a 9x13 casserole, spray with Pam, spread 1/3 jar of spaghetti sauce.
*Place 3 no-boil lasagna strips on sauce.
*Mix cottage cheese with egg and parmesan cheese.
*Spread half on lasagna.
*Spread half of roasted vegetables.
*Spread 1/3 jar of sauce.
*Spread half of 8 oz bag of shredded mozzarella over sauce.
*Add 3 more no-boil lasagna strips.
*Spread the rest of cottage cheese mixture.
*Spread the rest of the roasted veggies.
*Spread the rest of the sauce.
*Spread the rest of the mozzarella.
*Bake in 350 degree oven for about 30 mins.
*Let sit before cutting.

Cooked Broccoli w/ Walnuts
Ingredients:
Broccoli flowers cut in half so there is a flat side
Olive oil in frying pan (enough to coat broccoli)
Soy sauce (low salt)
Walnuts (chopped)
Directions:
*When oil is hot but not smoking, add broccoli and stir to coat
*Brown on sides till crisp tender
*Add low salt soy sauce to taste and cook down till liquid is almost evaporated (this also steams the broccoli to cook more)
*Toss in chopped walnuts to taste

1&1/2 C shredded cooked chicken, beef, or pork
1 C bottled salsa
1 3&1/8 oz can jalapeno-flavored bean dip
1 tsp fajita seasoning
8 oz Monterey Jack or cheddar cheese, cut into eight 5&1/2 sticks
Directions:
*Wrap tortillas in foil; heat in a 350 degree oven for 10 mins or until heated through.
*Meanwhile, in a large bowl combine chicken, salsa, bean dip and fajita seasoning.
*To assemble, spoon 1/3 C meat mixture onto each tortilla near one edge.
*Top meat mixture with a stick of cheese.
*Fold in sides and roll up, starting from edge with the filling.
*Place tortillas, seam sides down, in a greased 3-quart rectangular baking dish.
*Bake, uncovered, in a 350 degree oven about 30 mins or until heated through.
*If desired, serve with lettuce, sour cream and additional salsa.

Dirt
Ingredients:
1 & 1/4 lb pkg. oreo cookies
8 oz cream cheese
1/2 C butter, softened
1 C powdered sugar
1/2 tsp vanilla
3 C milk
Two 3&1/2 oz pkg. instant choc. pudding
12 oz Cool Whip
Gummy worms
Directions:
*Crush Oreos
*Put Oreos in 1/3 bottom of bowl
*Mix cream cheese, butter, sugar and vanilla together. Set aside.
*Combine milk and pudding.
*Fold Cool Whip into pudding.
*Fold the pudding mixture and butter-cream cheese mixture together.
*Layer half of this mixture onto crumbled cookies in bowl.
*Layer 1/3 of cookie mixture, then rest of the pudding mixture and top with the rest of cookie mixture.
*As layering ingredients, place gummy worms throughout.
*Chill for 3-4 hrs before serving.

1 pint milk + 1 half pint half + half
2 Tbl dry mustard
1 chopped large onion
1 package ground sausage
2 lg bags shredded cheddar cheese
1 loaf bread (cut off crusts)
Salt and pepper
Couple of dashes of worcestershire sauce
Directions:
*Line bottom of 9x13 pan with bread.
*Mix eggs, milk-cream, seasonings and worcestershire. Sauce together till thoroughly mixed.
*Add in cheese, saving some to sprinkle on top.
*In large bowl break sausage apart and mix in onions.
*Pour liquid over sausage and onion.
*Mix thoroughly and pour over bread evenly.
*Sprinkle with saved cheese.
*Cook @ 350*F for about an hour.
Serves: A large group of people!

Macaroni and Cheese

2 cups elbow macaroni
4 tbls butter
1/2 onion minced
1-2 tsp flour
1/2 lb. sharp cheddar cheese cubed
1 1/2 c milk
buttered bread crumbs
Directions:
1. Cook macaroni until al dente. Place in casserole sprayed with Pam.
2. In meantime, melt butter in sauce pan on low. Add minced onion. Cook until soft but not brown. Add flour to onions and stir.
3. Add milk and cheese. Cook on med-low until cheese starts to melt, stir occasionally.
4. Pour over macaroni and sprinkle buttered bread crumbs over top.
5. Bake about 20 mins at 325.
Serves: 6-8
*Personal notes: To eyeball amount of macaroni, use half of a 16 oz box. While cheese mixture is melting, add a few grindings of fresh pepper.
