Chocolate Chip Cookie Pizza

Ingredients:
1 tube chocolate chip cookie dough
12 oz. cool whip
2/3 c. powdered sugar
1 pkg cream cheese
1 lg pkg chocolate pudding
2 3/4 c. milk
2 chocolate crunch bars
1 tsp. vanilla

Directions:
*Bake cookie dough at 350' for 12-15 min. on a cookie sheet. 
*Let cool.

*2nd layer: 
2 c. cool whip
1 pkg softened cream cheese
2/3 c. powder sugar
1 tsp vanilla
---Refrigerate to harden and keep layers

*3rd layer:  Chocolate pudding
---Refrigerate to keep layers

*4th layer:  Top w/ remaining cool whip
*Final layer:  Chop and crumble crunch bar and sprinkle on top

It's not fancy but it's delicious!!

Peanut Blossoms

Ingredients:
48 Hershey's Kisses
1/2 C shortening
3/4 C peanut butter
1/3 C granulated sugar
1/3 C packed light brown sugar
1 egg
2 Tbls milk
1 tsp vanilla extract
1 & 1/2 C flour
1 tsp baking soda
1/2 tsp salt
Granulated sugar

Directions:
*Heat oven to 375 F.
*Remove wrappers from chocolate.
*Beat shortening and peanut butter in large bowl until well blended.
*Add 1/3 C granulated sugar and brown sugar; beat until fluffy.
*Add egg, milk and vanilla; beat well.
*Stir together flour, baking soda and salt
*Gradually beat flour mixture into peanut butter mixture.
*Shape dough into 1-inch balls.
*Roll in granulated sugar
*Place on ungreased cookie sheet.
*Bake 8 to 10 minutes or until lightly browned.
*Immediately press a chocolate piece into center of each cookie
*Cookie will crack around the edges.
*Remove from cookie sheet to wire rack.
*Cool completely.

Makes 4 dozen.

Prep time: approx. 15 mins.

Bake time: approx 8 mins

Pumpkin Cookies

Ingredients:
1/2 cup shortening
1 c. sugar
1 cup+ of pumpkin
1 tsp vanilla
2 cups flour
1 tsp soda
1tsp baking powder
1 tsp. salt
1 tsp. cinnamon

Directions:
*Cream shortening & sugar together.
*Add 1 cup pumpkin & 1 tsp vanilla.
*Mix dry ingredients together: flour, soda, baking powder, salt & cinnamon (can add a pinch of clove, nutmeg & ginger if desired).
*Combine with wet ingredients and mix well.
*Bake at 350F or 200C for 8-10 minutes.
*Cool on wire rack completely and frost with cream cheese frosting. (Can sprinkle/decorate if desired)

***Personal Notes:  This is my childhood neighbor Robin’s recipe. My sisters and I always crossed our fingers during the fall season in hopes that she’d bring some over!

Pumpkin Oatmeal Cookies

Ingredients:
1 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/4 teaspoon baking soda
1.5 cups packed light brown sugar
1/2 cup (1 stick) butter, softened
1 egg
1 teaspoon vanilla
1/2 cup solid-pack pumpkin
2 cups old-fashioned oats
1 cup dried cranberries (optional)

Directions:
*Preheat oven to 350 degrees.
*Line cookie sheets with parchment paper.
*Stir flour, cinnamon, salt, nutmeg and baking soda into medium bowl.
*Beat brown sugar and butter in large bowl with electric mixer at medium speed about 5 minutes or until light and fluffy.
*Beat in egg and vanilla.
*Add pumpkin; beat at low speed until blended.
*Beat in flour mixture just until blended.
*Add oats; mix well.
*Stir in cranberries, if desired.
*Drop dough by rounded tablespoonfuls 2 inches apart onto prepared cookie sheets.
*Bake 12 minutes or until golden brown.
*Cool 1 minute on cookie sheets.
*Remove from cookie sheets and cool completely on wire racks

Makes about 2 dozen cookies

No-Bake Cookies

Ingredients:
2 cups of white sugar
1/4 cup unsweetened cocoa powder
1/2 cup milk
1/2 cup margarine
1 teaspoon vanilla extract
1 pinch of salt
1/2 cup peanut butter (I use reduced fat JIF and it tastes great!)
3 cups QUICK cooking oats

Directions:
*In a saucepan over medium heat combine- sugar, cocoa powder, milk and butter.
*Bring to a boil while stirring occasionally.
*Boil for one minute and then remove from heat.
*Stir in vanilla, salt, peanut butter and oats.
*Drop by spoonfuls onto wax paper and then put into refrigerator for one hour to harden.
*After the one hour you can keep them in the refrigerator or store them at room temperature. I prefer room temperature. ;-)

Makes: 2 dozen or more

Cocoa Puff Cookies

Ingredients:
1 cup sugar
1/2 cup light corn syrup
1/4 cup honey
12 ounces of crunchy or creamy peanut butter (either is yummy)
4 cups of Cocoa Puffs

Directions:
*Mix together sugar, light corn syrup, and honey.
*Place mixture in pan and bring to a boil.
*Let boil for one minute then remove from heat.
*Mix in peanut butter and cocoa puffs
*Drop by spoonfuls onto wax paper and let cool.

Serves: *I can't remember exactly how many this makes, but at least a couple dozen cookies!

Tammy’s Monster Cookies

Ingredients:
1 cup butter (mom substitutes smart balance or uses part yogurt)
1 cup sugar (or substitute Splenda)
2 cups brown sugar
6 eggs
3 cups natural peanut butter (crunchy or creamy)
4 tsp baking soda
2 Tbs vanilla
9 cups oatmeal (whole are better than quick)
1 bag choc. chips
1 bag M&M’s
1 bag butterscotch chips
1 - 2 cups coconut (optional)

Directions:
*Heat oven to 350 F (or 200 C)
*Cream butter with sugars.
*Mix peanut butter, vanilla, eggs into sugar mixture
*Mix in baking soda and oatmeal
*Add in choc. chips, butterscotch chips and M&M’s
*Make cookies big or small, flatten a little on a cookie sheet.
*Bake for approx. 10 min (don’t over cook)
*Remove from oven and let set for a minute or two before removing from pan.

*Makes 6 to 12 doz. depending on the size of your cookies

*Personal Notes: My little sister makes these with her summer camp kidos (1st-6th graders) every summer and they LOVE this recipe. They make all of it themselves minus putting them in the oven.

Magic Cookie Bars

Ingredients:
No-Stick cooking spray
1 1/2 cups graham cracker crumbs
1/2 cup butter, melted
1 (14 oz.) can sweetened condensed milk
2 cups (12 oz. pkg.) semi-sweet chocolate chips
1 1/3 cups flaked coconut
1 cup chopped nuts

Directions:
*Heat oven to 350°F.
*Spray 13 x 9-inch baking pan with no-stick cooking spray.
*Combine graham cracker crumbs and butter in small bowl.
*Press into bottom of prepared pan.
*Pour sweetened condensed milk evenly over crumb mixture.
*Layer evenly with chocolate chips, coconut and nuts.
*Press down firmly with fork.
*Bake 25 to 30 minutes or until lightly browned.
*Loosen from sides of pan while still warm; cool on wire rack.
*Cut into bars or diamonds.
**For perfectly cut cookie bars, line entire pan with foil, extending foil over edge of pan. Coat lightly with no-stick cooking spray. After bars have baked and cooled, lift up with edges of foil to remove from pan. Cut into individual bars.

Variations:
Substitute chocolate chips or nuts with candy coated pieces, dried cranberries, raisins, mini-marshmallows or butterscotch chips.

"Phoebe's Fabulous Oatmeal-Raisin Cookies"

This is the recipe for "Phoebe's Fabulous Oatmeal-Raisin Cookies" from the Friends Cookbook. If you've forgotten the episode (or have just never seen it), here's what Phoebe has to say about her cookies:

PHOEBE: Ok, um, we haven't known each other for that long a time, and, um, there are three things that you should know about me. One, my friends are the most important thing in my life, two, I never lie, and three, I make the best oatmeal raisin cookies in the world.

RACHEL: Ok, thanks Pheebs. Oh my God,

PHOEBE: I know.

RACHEL: Why have I never tasted these before?

PHOEBE: Oh, I don't make them a lot because I don't think it's fair to the other cookies.

RACHEL: All right, well, you're right, these are the best oatmeal cookies I've ever had.

PHOEBE: Which proves that I never lie.

Ingredients:
12 tablespoons (175g) unsalted butter, softened
3/4 cup (160g) firmly packed light brown sugar
2/3 cup (130g) white sugar
1 large egg
1 teaspoon vanilla extract
2 cups (170g) rolled oats
1 1/4 cup (160g) plain flour
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups (200g) raisins

Directions:
*Preheat oven to 375F/190C/
*Cream butter and sugars together until light and fluffy.
*Add egg and vanilla extract; beat until well combined.
*In a separate bowl combine oats, flour, soda, baking powder and salt.
*Mix into butter mixture until just combined.
*Stir in raisins.
*Drop the dough by heaped tablespoons onto ungreased baking sheets, leaving a 2" gap between each mound.
*Bake for 12-15 minutes until golden brown.
*Cool on sheet for at least a minute before transferring to a rack.
*** I like to top them with a little cinnamon sugar too :)

Peanut Butter Cookies (THE Best)

Ingredients:
1 C peanut butter
1 C sugar
1 egg
1 Tsp vanilla

Directions:
*Preheat oven to 375 degrees
*Mix all four ingredients together until smooth and well combined.
*Drop by spoonful onto cookie sheets.
*Bake for 12 minutes.
*Remove from oven and let cookies sit for 2 minutes.
*Transfer to a wire rack to cool.

Zebra Cookies

Ingredients:
4 oz unsweetened bakers chocolate
3 eggs, beaten
1 1/2 cups sugar
1/2 cup cooking oil (I use vegetable oil)
2 tsp baking powder
2 tsp vanilla
2 cups flour (all purpose)
1 cup sifted powdered sugar
Milk chocolate kisses with white stripes (Hershey's Hugs)... I cannot find them at Spangdahlem but haven't looked at Bitburg or Ramstein yet - I just used plain Hershey's Kisses and still tastes great, but the Hugs give more of the zebra effect so I'm on the lookout for them!

Directions:
*Stir unsweetened chocolate in a small heavy saucepan over low heat until melted. Cool.
*Combine eggs, sugar, melted chocolate, oil, baking powder and vanilla in a large bowl.
*Gradually add flour to the chocolate mixture.
*Cover and chill for 2 hours.
*Shape dough into 1 to 1 1/2" balls and roll in the powdered sugar.
*Place 2 inches apart on ungreased cookie sheets.
*Bake at 375 degrees (F) for 8-10 minutes or until edges crack.
*Press a Hershey Hug or Kiss in center of the hot cookie and let cool on a wire rack.

Serving size depends on how big you make the round balls... could be up to 40 cookies.

Matt’s Boner Cookies

Ingredients:
1 c. butter
1 c. packed light brown sugar
1/2 c. white sugar
2 eggs
2 t. vanilla
1 1/4 c. flour
1/2 t. baking soda
1 t. salt
3 c. quick-cooking oats
1 c. chopped macadamia nuts
1 c. semisweet choc. Chips

Directions:
Preheat oven to 165 C (325 F)
Cream together butter, brown sugar and sugar. Beat in eggs one at a time, then stir in vanilla.
Combine flour, baking soda and salt — stir into creamed mixture.
Mix in the oats, nuts and chocolate chips.
Drop by spoonful onto ungreased baking sheets
Bake for 12-14 minutes. Allow cookies to cool for 5 min. - then transfer to a wire rack.
