Van's Fini Flight Quiche (aka Super Easy Spinach and Cheese Quiche!)

Ingredients:
*1 ready-to-use refrigerated pie crust
*1 tsp flour
*1 3/4 cups shredded cheddar cheese
*1/4 cup shredded swiss cheese
*1 package fresh spinach, sauteed
*1 cup milk or cream
*4 eggs, beaten
*1/2 tsp. salt
*1/4 tsp pepper

Variations: You can add other yummy veggies to compliment the spinach. Caramelized onions, leeks, and mushrooms would all work well.

Directions:
*Heat oven to 350°F.
*Line 9-inch pie plate with crust; flute edge.
*Toss cheese with flour in medium bowl. Add remaining ingredients. Mix. Pour into crust.
*Bake 1 hour or until knife inserted in center comes out clean.

Brownie Good Bars (aka Ridiculous Bars)

Ingredients:
1 box brownie mix (water, vegetable oil, and eggs called for on box)
1 container vanilla frosting (I used whipped)
3/4 cup salted peanuts, coarsely chopped
3 cups rice krispies cereal
1 cup creamy peanut butter
1 bag (12 oz) semisweet chocolate chips (about 2 cups)

Directions:
*Heat oven to 350.
*Make brownies as directed for 9x13' pan. 
*Cool completely.
*Frost brownies with frosting. 
*Sprinkle with peanuts
*Refrigerate.
*Meanwhile, put cereal in a large bowl and set aside.
*In a 1 quart saucepan, melt peanut butter and chocolate chips over low heat, stirring constantly.
*Pour over cereal in bowl, stirring until evenly coated.
*Spread over frosted brownies.
*Refrigerate about 30 minutes or until set before cutting.
*Store covered in refrigerator.
*Makes 24 brownies.

Personal note:  I doubled the recipe (except for the frosting) in the 9x13 pan so they were taller.

Pepperoni Dip

Ingredients:
1 8 oz cream cheese softened
1/2 c. sour cream
1 tsp oregano
1/4 tsp garlic powder
1/4 tsp crushed red pepper flakes
1/2 c. pizza sauce
1/2 cup chopped pepperoni
1/4 cup diced red bell pepper
1/4 c chopped green onions
1/2 cup mozzarella cheese

Directions:
*Beat cream cheese and sour cream.
*Add oregano, garlic powder and pepper flakes.
*Spread in 8"dish.
*Spread pizza sauce over cream cheese mixture
*Sprinkle pepperoni, bell pepper, and green onion over the top.
*Bake 350 for 10 minutes.
*Top with mozzarella cheese and bake for another 10 minutes, just enough to melt the cheese (Do not over cook the cheese on top)
*Serve with Carr plain crackers or Saltines.

**Personal Notes: 
*I double the recipe for parties, etc.
*You can add more pepper flakes and garlic to your liking.

Peanut Blossoms

Ingredients:
48 Hershey's Kisses
1/2 C shortening
3/4 C peanut butter
1/3 C granulated sugar
1/3 C packed light brown sugar
1 egg
2 Tbls milk
1 tsp vanilla extract
1 & 1/2 C flour
1 tsp baking soda
1/2 tsp salt
Granulated sugar

Directions:
*Heat oven to 375 F.
*Remove wrappers from chocolate.
*Beat shortening and peanut butter in large bowl until well blended.
*Add 1/3 C granulated sugar and brown sugar; beat until fluffy.
*Add egg, milk and vanilla; beat well.
*Stir together flour, baking soda and salt
*Gradually beat flour mixture into peanut butter mixture.
*Shape dough into 1-inch balls.
*Roll in granulated sugar
*Place on ungreased cookie sheet.
*Bake 8 to 10 minutes or until lightly browned.
*Immediately press a chocolate piece into center of each cookie
*Cookie will crack around the edges.
*Remove from cookie sheet to wire rack.
*Cool completely.

Makes 4 dozen.

Prep time: approx. 15 mins.

Bake time: approx 8 mins

Apple Dump Cake

Ingredients:
1 LARGE can or 2 REGULAR size cans Apple Pie Filling
1 cup brown sugar
1 package spice cake mix
1 cup chopped pecans or pecan halves
2 sticks butter (sliced into bits)

Directions:
*Preheat oven to 325*
*Layer all ingredients in the order provided above, ending with slices of butter scattered around the top
*Bake 1 hour
*Serve warm with vanilla ice cream (if desired)

Pumpkin Lasagna

Ingredients:

1/2 pound sliced fresh mushrooms (I didn't add these)
1 small onion, chopped
1/2 teaspoon salt, divided
2 teaspoons olive oil
1 can (15 ounces) solid-pack pumpkin
1/2 cup half-and-half cream
1 teaspoon dried sage leaves
Dash pepper
9 no-cook lasagna noodles
1 cup reduced-fat ricotta cheese or cottage cheese
1 cup (4 ounces) shredded part-skim mozzarella cheese
3/4 cup shredded Parmesan cheese

Directions:
*In a small skillet, saute the mushrooms, onion and 1/4 teaspoon salt in oil until tender; set aside.
*In a small bowl, combine the pumpkin, cream, sage, pepper and remaining salt.
*Spread 1/2 cup pumpkin sauce in an 11-in. x 7-in. baking dish coated with cooking spray.
*Top with three noodles (noodles will overlap slightly).
*Spread 1/2 cup pumpkin sauce to edges of noodles.
*Top with half of mushroom mixture, 1/2 cup ricotta, 1/2 cup mozzarella and 1/4 cup Parmesan cheese. *Repeat layers. Top with remaining noodles and sauce.
*Cover and bake at 375° for 45 minutes.
*Uncover; sprinkle with remaining Parmesan cheese.
*Bake 10-15 minutes longer or until cheese is melted.
Let stand for 10 minutes before cutting.

Serves: 6

Pumpkin Roll

Ingredients:
3/4 cup all-purpose flour
1 cup white sugar
1 tsp baking soda
2 tsp pumpkin pie spice
1 cup pumpkin puree
3 eggs
1 tsp lemon juice
2 TBSP confectioners' sugar

Filling Ingredients: (Or just use pre-made cream cheese frosting)
1 (8 oz) package cream cheese, softened
1/4 cup butter, softened
1 tsp vanilla extract
1 cup confectioners' sugar

Directions:
*Preheat oven to 375.
*Grease and flour a 9-13 inch jelly roll pan or cookie sheet.
*In a large bowl combine flour, sugar, baking soda and pumpkin pie spice.
*Stir in pumpkin puree, eggs, and lemon juice.
*Pour mixture into prepared pan.
*Spread the mixture evenly and bake at 375 for 15 minutes.
*Lay a damp kitchen towel on the counter, sprinkle it with confectioners' sugar and turn the cake onto the towel.
*Carefully roll the towel up with the cake in it.
*Place the towel on a wire rack to cool for 20 minutes.
*Mix the cream cheese, butter, vanilla and confectioners' sugar in a medium sized bowl with an electric mixer.
*Unroll the cake and spread the filling evenly on the cake.
*Immediately re-roll the cake (without the towel) and wrap it in plastic wrap.
*Keep the cake refrigerated.
*Before serving, cut the cake into slices

Bride of Frankenstein Treats

Ingredients:
1 can or tube of green decorating icing with decorator tips
12 prepared Rice-Krispie cereal treats
12 black jelly beans
12 small red licorice strips
24 green jellybeans

Directions:
*Pipe strips of icing across short end of Rice Krispie treat to create hair.
*Cut black jelly bean in half; attach to treat using small amount of icing to create 'eyes.'
*Attach 1 licorice strip using small amount of icing to create 'mouth'.
*Attach one green jelly bean using small amount of icing to each side of 1 treat to create 'bolts'.
*Repeat with remaining ingredients.

Makes: 12 Frankensteins

Apple Dip-Sticks

Ingredients:
1 large apple
16 bamboo skewers (6-8 inch)
1 to 1.5 cups finely chopped peanuts or pecans, toasted, or candy sprinkles
Half of a 10 ounce package of peanut butter or butterscotch morsels
1 tablespoon water
Candy-coated chocolates or mini chocolate chips (optional)

Directions:
*Cut apple in half from stem to bottom and core.
*Cut into 16 slices about 1/4 to 1/2 at thickest part and pat dry. (This is a very important step in order to allow melted morsels to adhere)
*Pierce a bamboo skewer through one end of each apple slice to resemble a lollipop.
*Set aside on paper towels.
*Place the nuts in a thin layer over a sheet of foil or waxed paper.
*Place morsels and water in a medium saucepan.
*Heat over medium-low heat until melted, about 10 minutes, stirring occasionally.
*Reduce heat to low.
*Pat apples dry again.
*Working with 1 at a time, hold the apple slice over the pan.
*Using a spoon or heat-safe rubber spatula, drizzle the peanut butter mixture back and forth over both sides of each apple slice then coat with nuts, if desired, pressing down to allow nuts to adhere.
*Set down on waxed or parchment paper.
*Repeat with remaining apple slices.
*Rest on paper until time of serving.
*Serve by placing the skewers (apple slices up) in decorative coffee mugs or pierce small holes in a small pumpkin or squash to use as a base.

TIP: To give a face to the apple slice, press candy-coated chocolates or mini chips on apple slices for eyes, nose and mouth, if desired.

Boneyard Breadsticks (Or Bloody Bones)

Ingredients:
Pillsbury pre-made breadsticks
Olive Oil
Parmesan Cheese
Italian Seasoning
Marinara Sauce

Directions:
*Separate each breadstick and cut about a 1-1 1/2 inch slit down the center of each end (each end should look forked).
*Roll each side of the slit and squish down so that it stays put during baking. It should look like two small balls (sts) on each end of the breadstick.
*Brush breadsticks with a little olive oil and sprinkle on parmesan cheese and seasoning.
*Bake as directed on package.
*Serve with Marinara Sauce.

These are really cute and super easy to make for any halloween bash. They look like real bones when finished!

Sausage Balls

Ingredients:
1 lb hot bulk sausage
3 1/2 cups bisquick
10 oz package grated sharp cheese

Directions:
*Combine all ingredients and shape into bite size balls.
*Bake at 350 F for 15-20 minutes.

Makes ~100 balls

Fiesta Dip

Ingredients:
1 large pkg of light sour cream
1 pkg McCormics Hot Taco seasoning

Directions:
*Add togther and mix well.
*Serve with tortilla chips or veggies

BBQ Cocktail Sausages

Ingredients:
1 tbsp. liquid smoke
1 tbsp. soy sauce
1 tbsp. brown sugar
1tbsp. worthershire sauce
1 bottle bbq sauce of your choice
1 lb. cocktail sausages

Directions:
*Combine all ingredients (except sausages) in saucepan and bring to a boil.
*Let simmer for 10 minutes then add drained sausages.
*Cook till sausages are hot.

*Notes:  Great for crock pot!

Spinach Balls

Ingredients:
2 boxes frozen chopped spinach
1 cup Pepperidge Farm herb stuffing
4 eggs, beaten
2 fine chopped onions
1 stick butter, melted
1 tbsp. garlic salt
1/2 cup parmesean cheese
1/2 tsp. pepper
1 tsp. accent

Directions:
*Cook spinach slightly and drain well.
*Mix all ingredients.
*Form into balls (golf ball size).
*Bake at 350 for about 10-15 minutes. Remove at once. Do not over cook!

Jalapeno Appetizers

Ingredients:
12 Jalapenos
1pkg of cream cheese(the whipped works the best)
6 pieces of uncooked bacon in halves
1 teaspoon cumin
1 teaspoon garlic powder
12 toothpicks

Directions:
*Slice jalapenos open on one side and clean out white part and seeds leaving the jalapeno mostly intact, and set aside.
*Add cumin and garlic powder to cream cheese and mix well.
*Stuff cream cheese into jalapenos, then wrap bacon half around jalapeno and hold it in place with toothpick.
*Grill ahead of whatever else you are grilling, place in a circle around the outline of the coals.
*Cook until bacon is brown, or until the jalapeno is tender.

**Note: Warning: the cream cheese will drip from the jalapeno onto the grill

Wedding Chicken Salad

Ingredients:
Before other ingredients:
*Bake 3 whole chicken breast (I typically use the bone in, with the skin on then remove skin after cooking) for 1 1/2 hours at 350 degrees .
*Season with a little Lawrys season salt before baking. (You can also use a rotisserie chicken or cook a whole chicken in the crock pot...but you will want a BIG chicken. The ones from the chicken man on base are too small...so you would want 2 of them!!!)
*Shred chicken into bite size pieces.

Combine chicken with the following ingredients:
1 1/2 cups celery chopped finely
1 cup shredded cheddar cheese
1 cup mayo (I use light Hellmans)
1/4 cup milk
2 tablespoons of dry sherry (I just eyeball it and probably use about double)
2 tsp chopped onion (I use alot more....about a half and onion)
1/2 tsp lawrys season salt
1/2 tsp grated lemon rind ( I use the rind of an entire lemon)

Extra ingredients:
30 oz can Chinese noodles
1/4 cup slivered almonds (optional)

Directions:
*Combine chicken with its ingredients, mix well, and put in greased 9x13 pan
*Top with 30z can of chinese noodles and 1/4 cup slivered almonds (you can omit almost if desired) right before baking. Otherwise they get soggy)
*Bake at 350* for 30 minutes
*Serve in a lettuce cup or alone with a side of pasta salad, rice or fruit

Note:  If you have leftovers, remove the chinese noodles from the top. Good served cold also!!!

Broccoli Salad

Ingredients:
10 cups fresh broccoli
1 red onion, chopped
1 cup pecans
1 cup dark and light raisins
1 lb bacon, cooked and crumbled
Dressing Ingredients:
2 cups Hellmann's mayo
4 tsp red wine vinegar
1/2 cup sugar

Directions:
*Mix dry ingredients together
*Mix together dressing ingredients and add to salad

Notes: To prevent dry ingredients from becoming too soggy, try to add dressing just before serving....

Source: My Mama! (Although she also adds 1 cup fresh sliced mushrooms, but I don't like that, so I don't!)

Fresh Fruit Dip

Ingredients:
Marshmallow Creme
Whipped cream cheese spread
Confectioners sugar

Directions:
*Use equal amounts of marshmallow creme and whipped cream cheese spread.
*Add confectioners sugar to desired sweetness.
*Serve with a variety of fresh fruit.

*May be tinted with food coloring.

Favorite Easy Dip

Ingredients:
1 container onion and chive cream cheese
Salsa
Mexican blend cheese or cheddar cheese

Directions:
*Using a pie pan, spread container of onion and chive cream cheese on the bottom
*Next layer add salsa
*Sprinkle with grated mexican blend cheese or cheddar whatever you have
*Microwave until cheese is melted

Spinach Pasta Salad

Ingredients:
1 box bow tie pasta
1 bag fresh spinach
Chopped marinated sun dried tomatoes to taste
Small red onion chopped
1 can black olives sliced
1 container feta cheese
1 Good Seasoning Italian dressing (make according to directions - better if you use good olive oil)
--You can add some lemon juice and garlic

Directions:
*Mix everything together and Voila!
