Ingredients:
16 oz ziti
1 lb ground beef
15 oz ricotta cheese
1/2 cup parmesan cheese
1/4 cup parsley
1 egg
3/4 tsp salt
1/4 tsp pepper
8 oz mozarella
2 jars Classico (any flavor) sauce
Directions:
*Brown and drain beef
*Add 1 jar Classico, ricotta, and next 5 ingredients.
*Cook ziti and stir into mixture.
*Layer 1/2 ziti mixture, 1/2 remaining jar of sauce, remaining ziti mixture, remaining sauce.
*Top with shredded mozarella cheese.
*Bake 20-30 minutes at 350 F.

Black Bean Corn Salsa
Ingredients:
1 (15 oz) can black beans
1 (11 oz) can sweet whole kernel corn
2 medium tomatoes chopped
1 red bell pepper chopped
1/3 cup cilantro
1/4 cup diced red onion
1 Tbsp minced jalapeno pepper
3 Tbsp fresh lime juice
1 tsp salt
1/2 tsp ground black pepper
1 avacado chopped
Directions:
*Drain black beans and corn.
*Combine all ingredients in a bowl, except avacado.
*Cover and chill at least 2 hours.
*Add avacado before serving.
*Personal Notes: Served at the December '09 book club meeting = HIT!

Sausage Balls
Ingredients:
1 lb hot bulk sausage
3 1/2 cups bisquick
10 oz package grated sharp cheese
Directions:
*Combine all ingredients and shape into bite size balls.
*Bake at 350 F for 15-20 minutes.
Makes ~100 balls
Personal note: To be enjoyed by all at Ellie's upcoming baby shower!!!

Stuffed Mushrooms
Ingredients:
28 white mushrooms
1/2 cup Italian-style dried bread crumbs
1/2 cup grated Pecorino Romano
2 cloves minced garlic
2 Tbsp chopped parsley
1/3 cup extra-virgin olive oil
Salt
Directions:
*Preheat oven to 400 F.
*Stir all ingredients, except mushrooms, together plus 2 Tbsp olive oil in large bowl.
*Coat pan with 1 Tbsp olive oil and arrage mushrooms.
*Spoon mixture into each and drizzle remaining olive oil on top.
*Bake for ~25 minutes.

Kessler Fini Flight Cupcakes
Ingredients:
Cupcakes:
1 cup sweet butter softened
1 cup superfine sugar
2 cups self-rising flour
1 tsp. baking powder
4 eggs
1 tsp vanilla extract
Frosting:
3 cups confectioners' sugar sifted
1 cup sweet butter softened
Pinch of salt
Directions:
*Preheat oven to 350 F.
*Combine all the cupcake ingredients in a large bowl and beat with an electric mixer until smooth and pale, about 2-3 minutes.
*Spoon the batter into the cups.
*Bake for 20 minutes.
*Remove pans from the oven and cool for 5 minutes.
*Then remove the cupcakes and cool on a rack.
*To make the frosting, cream the confectioner's sugar, butter, and salt with an electric mixer until smooth. *Spread liberally over the cupcakes.

1 cup sugar
1/3 cup cocoa
1/4 cup milk
Pudding Mixture:
2 (3 oz) packages vanilla instant pudding
3 cups milk
1 (8 oz) container frozen non-dairy whipped topping
Crust:
1 box graham crackers
Directions:
*Melt butter in a small saucepan over medium heat.
*Add sugar, cocoa, and milk.
*Stir until well blended.
*Boil 1 minute.
*Set aside to cool.
*To prepare pudding mixture, mix pudding and milk in a large bowl.
*Fold in the non-dairy topping and blend well.
*In 9x13 baking dish, arrange 1 layer of graham cracke squares.
*Spread half the pudding mixture on top.
*Add another layer of graham cracker squares.
*Pour remaining pudding on top.
*Add a final layer of graham cracker squares.
*Top with chocolate mixture.
*Cover and refrigerate overnight.
