Ingredients:
Loaf of white bread, unsliced (bread machine bread works the best)
Eggs
Butter
Directions:
*Heat a skillet on medium heat.
*Slice the bread into thick slices — butter both sides.
*Cut a hole in the center of the bread (about the size of sand dollar) -- save the center, that’s the best part!
*Place the bread (and the cut out part) on the skillet
*Break an egg and cook to your desired consistency — flipping every 1-2 minutes

Matt’s Hole in “Juans” (Mexican-style)
Same recipe as above...served with homemade salsa (or any salsa will do) and shredded cheddar cheese
Homemade Salsa Ingredients:
Diced tomatoes – 1 can
Rotel – 1 can
Cilantro – one fist full
Green onion – one fist full
Salt/pepper to taste
Directions:
*Place in a blender and mix for 45 seconds. Adjust the above portions to taste — chill in the fridge for 30 min. prior to using.
