Ingredients:
1/2 cup shortening
1 c. sugar
1 cup+ of pumpkin
1 tsp vanilla
2 cups flour
1 tsp soda
1tsp baking powder
1 tsp. salt
1 tsp. cinnamon
Directions:
*Cream shortening & sugar together.
*Add 1 cup pumpkin & 1 tsp vanilla.
*Mix dry ingredients together: flour, soda, baking powder, salt & cinnamon (can add a pinch of clove, nutmeg & ginger if desired).
*Combine with wet ingredients and mix well.
*Bake at 350F or 200C for 8-10 minutes.
*Cool on wire rack completely and frost with cream cheese frosting. (Can sprinkle/decorate if desired)
***Personal Notes: This is my childhood neighbor Robin’s recipe. My sisters and I always crossed our fingers during the fall season in hopes that she’d bring some over!
